There's a neutral third way to end the quest.
After finding all the jars and speaking with thrumbo, returning to MC and passing a check to get more out of him will have him give you the torch + money and take the heart back. He will no longer ask for thrumbo's corpse, and thrumbo will just beg you to destroy the jar when interacted with.

There are 3 ways into the mansion.
A hidden door on the western side.
A hole for small characters on the Eastern side.
A Locked door on the southern side that can be accessed from the roof.
You can fly or misty step to the roof from Felogyr's fireworks top floor.

I killed Carrion via the Save the Artist quest lines. I knew nothing about any body parts in jars and I decided not to search for Thrumbo, feeling he clearly left for a reason and does not want to die or go back. Once Carrion was dead I was able to loot and collect every rewards mentioned in this guide. I have no idea if he came back alive or not, so may go back and check.
I now see there is a ring from Thrumbo so will probably go get that now.

I came across Carrion by accident, while exploring the area, and killed him and his ghouls. Then I found out it was a quest and tried to find Thrumbo but he was a puddle of bones and flesh in his house. Then, while passing in front of Carrion's estate, I notice he's back to life! - but not his ghouls. So I kill him again and this time I explore the place and find the heart jar in the basement. I pick it up and do other quests, then, after waking up in camp I find a note from him saying that he came in the night and took back his heart!! that I can't kill him and various threats if I try again.... olololol
I'll give it another try, starting from the other body parts (I haven't explored that area yet) and go back to his house last to get the heart & let u know how it goes :D

if you're worried about losing a vendor, don't. Thrumbo comes in the room afterwards and takes over for him.

Incase anyone had a problem beating him, I found the best way to do this battle was to chuck the urns at him and have someone shoot it, it does a fireball's worth of damage to him (use the liver first as it give him fire res i think). Also blackhole helped out a lot pulling all the ancients in the room to one spot.
I think I still have his lungs, lol.

For those who couldn't/didn't get to the heart fast enough, it's in the basement of his house. RIP Thrumbo

He is very weak to Telekinesis so you can throw him around Baldurs Gate getting him attacked by the Steel Watch and Flaming Fist. Shame they aren't effective against him but still funny to watch.

If you killed or didn't save Thrumbo you can still collect the other jars and the Heart Jar is in the hidden basement.

Kind of an oversight to not include any actual map of the Graveyard location.

where do I get the heart if carrion kill Thrumbo cause I was too late to find the stuff?
- Anonymous
i found the jars by just playing. didnt destroy em. Stubbled upon Carrion and just killed him. didnt have to do anything. he just died.. Found
trumbo and no ring. so i guess there is a order to get everything.
Couldn't find the lungs...
I searched everywhere... decided to talk to MC accidently unlocked a mummy next to him (misclick)... I had to kill MC... was interested to know what happens next. Thrombo tells me to destroy the heart before he returns> Long rest> I thought that maybe I could chat with MC one more time to resolve our issues, but he never came back... instead I got a threatening letter... he took the urns back and they rest in his basement. so I destroy the urns I could, Liver, brain, and heart.. but oh wait... where are the lungs I looted earlier? Nowhere... if this is a bug, I'm screwed out of a few quests
Lungs completely vanished.
