Apparently the game treats knocking out NPCs the same way as if you killed them. At least from what I can gather on other forums, that's how it was in earlier patches of the game (think beta, idk much about that for BG3). As of 11/08/2023, there still doesn't seem to be a way to wake up knocked out characters of what I have found.

I have tried the following without any luck: Spell: Healing Word, Potion throw: Healing Potion, Action: Shove, Spell: Command: Action: Move closer, Cantrip: Friends, Cantrip: Minor Illusion, Attacking: Find Familiar: Crow: Beak Attack (after healing it, without killing the NPC).
Personally I find this a big problem, as it is rather annoying having to do a long rest just to speak to an NPC after combat has ended. I hope this gets fixed.

The game information about the condition itself says the following:
      "Knocked Out
      Condition

Affected entity can't move or take actions, bonus actions or reactions.

Will disapear permanently after a long rest."

We need a way to wake up unconscious characters without taking a long rest. Taking a long rest seems to make NPCs you knocked out disappear.
